広島風お好み焼き

This is a 広島風お好み焼き Hiroshimafuokonomiyaki it's actually (as the name can tell you ^^") the kind of Okonomiyaki from the city of Hiroshima! It's a delicious okonomiyaki made from several layers of ingredients. First a "pancake" made from flour, then a biiig layer made from a lot of vegetables and pork slices, then fried noodles, egg and finish with a lot amount of okonomiyaki sosu and green onion. If you can find it, use otafuku sosu, it's an okonomiyaki sosu from Hiroshima ;D

The last think it's that I dedicated this recipe at my Japanese teacher Tanaka-sensei how is from Hiroshima. (=^-^=)


1 serv 一人  
- 50g of cake flour 小麦粉
- 1/2 of egg 卵
- 50 ml of water 水

For the amount, it's as you like...

-tororo konbu とろろ昆布
-a lot of kyabetsu キャベツ (green cabbage) 
-moyashi  もやし  (beansprouts)

-katsuobushi 鰹節

- agedama 揚げ玉/tenkasu 天かす (tenpura bits)
- some pork belly slices  豚バラ薄切り

-100g of chuka men 中華麺 (Chinese style Japanese noodles)
- 1 egg 卵
- a lot of okonomiyaki sosu お好み焼きソース
- a lot of konegi 小葱 (loog green onion)

 

Mix the flour, water and egg in a bowl

and let it in the fridge for 30min.

 

Remove the white hard part of cabbage leaves,

and cut very finely

Remove the white part of konegi

And cut the green part very finely

In a big fry pan, spread batter for making a circle of ~15 cm 1n diameter (keep a little bit of the batter for later)

then spread some katsuobushi and tororo konbu.

Tororo konbu is like... "fiber of konbu"

then add a biiiig amount of cabbage

I know there is to much, but I love making huuuge okonomiyaki XD

add moyashi (less than cabbage)

pork slices (add salt and pepper if you want) and then add a little bit of batter on top

Use large spatulas, places spatulas under the okonomiyaki

And turn over very quickly good luck ;D! After that if your okonomiyaki is destroy XD no problem, just replace the escaped vegetables in the okonomiyaki using spatulas but don't press the okonomiyaki!

Let it cook for 15 min a low heat.

Cook chukamen in boiling water for 3-4 min (the cooking time depends on the kind of chukamen),

when they are cooked, wash it in cold water.

Then fry them in a fry pan at high heat and add seasoning, soy sauce, salt or okonomiyaki sosu... it's as you like.

After 15min press the okonomiyaki for give it a good shape (=^O^=)

Make a round shape whit the noodles and place the okonomiyaki on top of noodles.

Add the egg in the pan, break the yolk and spread it in round shape

don't over cook the egg! It have to be a little bit raw before putting the okonomiyaki on top. So put the okonomiyaki on top     ^^" press...

And for the last time, flip it over!

Don't do like me, add the sauce before putting it in the plate or the sauce'll flow XD So add the okonomiyaki sosu. In ancient times, shoyu (soy sauce) was used instead of okonomiyaki sosu, so if you don't find it, you can use shoyu ;D!
